Roast Chicken

Method
Pre heat oven to 180°C. Place large chicken into roasting tray and stuff with half a lemon, half an onion, half a bunch of thyme and a topped bulb of garlic. Fill the roasting tray with 1.5 onions, topped bulb of garlic, the other half of thyme, half a lemon and a drop of white wine.
Lightly rub chicken with some olive oil covering every bit of flesh and other ingredients in the tray. Then sprinkle on Arabian Nights Spice Blend all over the chicken and tray contents. Fill the roasting tray with 1.5 onions, bulb of garlic topped, the other half of fresh thyme, half a lemon and a drop of white wine.
Cook for 1hr, cover with foil for the last 30mins and rest for another 15 - 30mins. Serve with all your classic roasting paraphernalia.
Once cooked use remaining tray contents to make a cheeky onion and garlic puree... its pretty naughty! A great edition to the meal. Squeeze out the roasted garlic into a blender, with the onions and the juices from the tray accordingly (you do not want it to runny). Add salt to taste.
