Panzanella Buratta salad

Method

Step 1

Pre heat oven to 160°C. Cut bread into 1cm cubes, cover in a bit of olive oil and sprinkle the Italian spice blend all over the cubes with a solid pinch of salt. Mix well with your hands and cook for about 25-30mins. (Don't let the crotons burn as they turn bitter. Add crushed garlic cloves to the roasting tray for even more flavour).

Step 2

Make salad dressing. Combine 50ml of extra virgin olive oil with 25ml of aged balsamic vinegar and a pinch of salt. (Mix well before adding to salad).

Step 3

Chop tomatoes, cucumber and red onion. Pick fresh basil leaf and put all ingredients into a mixing bowl. Once crotons have cooked & cooled add them to the mixing bowl with dressing and mix well. Serve into a bowl with burrata.
