Jerk Chicken Salad

Method

Step 1

Cut chicken thighs into strips and completely cover with Jerk Jamin' Spice Blend and put back into fridge whilst you fire up the bbq. You can also pan fry the chicken, grill or cook in the oven.

Step 2

Make the honey, lime & chilli dressing. Mix together extra virgin olive oil, zest & juice of one lime, honey, half of a finely chopped chilli and a pinch of salt.

Step 3

Prepare the salad: in each bowl put together mixed leaf, cucumber, red pepper, red onion, avocado and pineapple.

Step 4

Cook chicken until 75°C. Serve onto salad, cover with dressing and garnish with fresh coriander and the rest of the red chilli sliced.

Tip

Marinate chicken for up to at least 1 hour for better flavour.
