Baked Salmon
Jerk Jamin'

Method
Step 1
Pre heat oven to 180°C. Grab an oven dish and put inside 2 tbsp of olive oil, juice of 1 lime, 150ml white wine, 250g chopped vine tomatoes and 1 tbsp of Jerk Jamin'. Mix well and cook for 25 mins.
Step 2
Sprinkle some of the Jerk Jamin' Spice Blend on the salmon, let it infuse while you wait for the first part to cook. After 25mins put salmon into oven dish, spoon some juices over the salmon, add chopped courgette and cook for another 20mins.
Step 3
Garnish with parsley and serve with potatoes.
